Witches Bread
- 400 g spelt flour
- 100 g rye flour
- 1 cube fresh yeast
- 1 tsp honey
- 1½ tsp salt
- 320 ml lukewarm water
- 2 tbsp olive oil
- 1 tsp rosemary
- 1 tsp thyme
- ½ tsp ground caraway
Optional: pumpkin seeds, black sesame seeds, or dark malt flour.

(1) Dissolve the yeast and honey in the warm water. Let it rest briefly until the water comes to life and shows small bubbles

(2) Mix flour, salt, and herbs. Add liquid and oil and knead everything vigorously.

(3) Let the dough rise, covered, for about 60 minutes.

(4) Shape into a round loaf. Using a sharp knife, score a spiral, a circle, or a protective symbol into the dough.

(5) Bake at 200°C for about 35 minutes, until the bread is dark golden. When it sounds hollow when tapped, it's ready.
