RICE PAPER DUMPLINGS
- 250 g Oyster mushrooms
- 200 g veggie minced meat
- about 5 cm ginger
- 6 cloves of garlic
- 4 birds eye chillies
- 3 spring onions
- soy sauce
- a bit of lemon juice
- sesame oil
- rape seed oil
- rice paper (I used 8 for about half of the filling)

(1) Finely cut ginger, garlic, chilies, slice spring onions, separating white and green parts
(2) Tear mushrooms into thin strips
(3) Heat sesame oil and rape seed oil in a pan
(4) Fry ginger, garlic, chillies and green parts of spring onion
(5) Add veggie mince, fry
(6) If neccessary add some water
(7) Add mushrooms, soy sauce and lemon juice and fry until everything is softened, add green parts of spring onion at the end
(8) Soften rice paper in water, add filling, fold into a dumpling, and repeat to wrap with a second rice paper sheet
(9) Repeat until filling is used up
(10) Preheat airfryer to 190 degrees
(11) Add dumplings, spray with some oil
(12) Fry for about 15 minutes or until nice and crips, turn several times and spray with more oil if needed
(13) serve with rice and peanut sauce
