Soba with Veggies and Miso
150 g soba noodles
1 tofu
2 eggs
shitake mushrooms
2 pak choy
snow peas
3 spring onions
soy sauce
miso
garlic
red chillies

1. Cut tofu into pieces and deep fry until golden brown.

2. Mix eggs with soy sauce and prepare an omlette, cut into pieces

3. Cook soba noodles according to direction on package ... not too soft !

4. Prepare 350 ml miso soup (miso paste + hot water).

5. Stir fry garlic, shitake mushrooms, pak choy, snow peas, spring onions.. not too soft !

6. Put soba in serving bowls, put tofu and egg on top, then veggies and pour in miso soup. Add chillies according to taste.

7. enjoy !
